IFTAR SNACK IDEA - MASA/ WAINA

Good old masa. There is hardly anyone I have met, who has tasted this snack and doesn't crave it. It can be consumed with the traditional vegetable soup or with ground kulikuli or with any condiment of choice. It's most popular in the north. There are certain days that you just desire to eat this breakfast/ dinner snack, but in the event that it is unavailable to purchase, I have endeavored to ask an expert friend of mine for the procedure of making this. So here goes.
You will need;
The special masa fry pan
Rice (tuwon shinkafa rice)
Yeast
Oil for frying
Kanwa/potash .

Soak your rice for a few hours and grind. Boil a handful or two of the rice and mix with the grinded one after it has cooled. Put some yeast and allow to ferment for better result. Heat the oil very well in the bowls of the special pan to avoid sticking. Measure your batter in a shallow spoon and fry. Turning over once the other side is done. You may choose to add salt or sugar to the mixture before frying.

    1. add like 3g of yeast to a kg of the rice. you can also try this recipe that includes potash (kanwa). 1kg tuwon rice, 3g yeast, 20g sugar, 20g salt, like 20g potash to 400ml of water. grind d rice dry, then soak in potash water. allow to sit for about 10 hours so it ferments, fry in masa special pan
